Emily Stone, founder of Bexar Kolache Co. , her second act in mid-January to join her miniature San Antonio Colacci-style empire. The 1,488-square-foot shop window at 819 Fredericksburg Street will provide a dining area where pastry lovers can sample Czech and Slovak foods that combine pastry chips with a sweet or savory filling.
Although Stone does not claim to be from Central Europe, she says sabj Her pastries “honour the deep roots of Mexican and Czech immigrants from South Texas and their descendants.”
gives the Clear A European baked variety, Bexar Kolache flavors include prickly pear cactus, mango, and chamois as well as Mexican chocolate. Stone also works with local companies including Kiolbassa Smoked Meats and 2M Smokehouse on meat fillings that are popular with Czech-American variations of their stuffed rolls.
The new store is expected to open next month, but folks who can’t wait to sample Stone’s view of the classic handheld snack can do so from 7 a.m. to 11 p.m. at their original location at 205 E. Hildebrand Ave.
